International Pancake Day

Today is International Pancake Day. For some reason, my goofy son has been so excited about this day. He has been talking about it for a week. He woke up at 6:00 am this morning, and headed for the recipe cupboard. He pulled out the recipe for crêpes. He got all the ingredients and proceeded to mix up a batch of crêpe batter. While he was mixing away, he asked me what it was like to be a mom. I told him that for the most part it was great, but there are times that it isn’t so fun. He then said “ I wonder what it’s like to be a dad?”. He said I guess you wouldn’t know, and I told him he would be surprised. I do know how to be a mom and a dad. He then said “ I wonder what it’s like to be Emeril.” I then said that it would be like “BAM”. That kind of sacred him a bit, and some of the flour went on the floor. He made some great crêpes, quite the little chef. He has told me for years that he wants to join the army. Of course that freaks me out, but I tell him that if is going to be in the army, to make sure he’s the cook. So he is on his way.
